Jack laughs at me for pretending to be a TV chef, but I've always liked to get everything ready before I start cooking (a way to mitigate the panic). Turns out that this is an official cooking technique, called "mise en place"! I learned this from browsing The New Cook's blog, something I'll be doing more.
